Summary: Researches in viticulture and enology, has included
problems of inventarisation and selecting existing cultivars,
ampelotechnic, agrotechnic and introduction of clon matherial with the
purpose of viticultur and enology improvment. This has been the way of
including Croatia in international project with the purpose of scientific
and relevant elaboration of major genotyps in Croatia with equal
participation in international system of exchange data. Thus making a
significant scientific contribution of completing genoplasmatic data for
grapevine. Obtaining a solid base for receiving new cultivars by
conventional breeding methods and cell - culture technics. Research
results are basis for progress in viticulture and enology. Detail research
of physical and chemical composition, sensory evaluation of wines
produced from selected cultivars,with accent on hiperoxidation,
someenological clarificators and treatments on wine quality, will be
performed. It is congruently with modern trend of production socalled
ecological wines.
In the wines of chosen cultivars a detail researches of chemical
composition with special regard to aromatic profil was performed.
Enquiaris werw made regarded to effect of hiperoxidation of must on the
quality of white wine. New researches are going with malolactic bacteria on
the quality of red wines. The composition of volatil components (alcohols,
esters) and bounded acids
(malic, lactic) in natural and controled fermentation are conducted.
Research goals: On the request of FAO in 1979., a iniciative was
made forpreserving gen fundus of plant species and cultivars in
theworld.The organisation of gen bank for vines took OIV Paris.The Faculty
of agriculture, Departments of viticulture andenology was registrated in
1989. under the sign "JUG - 05 - ZGB". According to our requirement,this
registration was changed in 1994 to CRO 01.Work on inventarisation of
autochthon and domestic cultivarsVitis vinifera L. will be continued, as
well as investigation on modern technology of reproduction
virus-freematherial, interaction of stock and scion. Wine researchec:
establishing the relevant aroma composition and organic acids content in
relation to some tehnological process (hiperoxidation) and the usage of
enological means (enzyme, malolactic bacteria kulture).
