Summary: In the proposed project, the processes for the cultivation
of yeast biomass which can be used for special purposes (brewers yeast
for bakery, food supplement and therapeutics) were researched. Particular
atention has been performed for the processes of the incorporation of
bioelemnts cink, selen, chrom and germanium in yeast biomass, and the
production of brewers yeast for bakery. The optimisation of growth
parametar formentioned processes were examined in laboratory fermentors.
On the basis of these parametars achieved in laboratory scale, the
technological procedures for the industry have been developed. For some of
these processes it proposed to bilt up a new industrial plants or to
reconstruct the existing.

Research goals: The aim of the project was production of yeast
biomass for special purposes, what could in a great deal improve the
production of the yeast biomass in Croatia. For the production of yeast
S.uvarum for bakery the whole technological process has been done, which
could be transfered to industry. For the bakers yeast production from six
strains of S.cerevisiae, one was selected and used in industrial procedure
(Pliva, S.Marof). On the other hand, the process for incorporation of
bioelements have been researched. One process was examined in industrial
trial, (Badel, Sesvete). For the production of feed, different yeast
strains were used, and processed on alfalfa medium.
