    Summary: Wine adulteration has led to the introduction of highly sensitive analtycal methods in the quality control of foodstuffs. One of these is the NMR. The paper describes application of the 2H NMR technique and the 13C NMR technique in wine analysis. These techniques make it possible to obtain the characteristic spectra of the wines investigated very quickly. The wine can be identified on the basis of these spectra. At the same time a number of components which are also quality parameters can be quantitatively detemined without destoying the sample.

    Summary: Fundamental to heat transfer analysis is the first law of thermodynamics or the energy equation, which will be the starting point for any problem solution. In convection problems one must also use the law of conservation of mass and Newtons second law of motion to evaluate a given situation adequately. In all convective heat transfer situations energy exchange occurs between surface and adjacent fluid. The nature of the fluid flow must therefore be understood. Many industrial processes involve fluids or fluid mixtures and heat transfer. Fluids and fluid mixtures behave in various complex ways and in consequence specialized sets of operating and design rules have been developed. One particular group of interest is that in which the effective viscosity varies with shear rate the so-called non-Newtonian fluids are encountered in the food processing industries.

    Summary: Manufacturers point to numerous advantages that the various extruders and cooking techniques offer over conventional cooking methods. Because extrusion cooking is continous, as opposed to batch process, it ensures greater consistency in product quality.The machinery itself is more efficient because of lower energy, space and staff requirements. Extruders allow for greater flexibility in product formulations. Cereal flakes can be made from different cereal flours, different particle sizes or cheaper raw materials. Experts in the industry stress that this ability to employ a wide variety of raw materials is important for the development of new products, especially cereals and snacks of ashort shelf-life.

    Summary: This paper reviews the recent advances and general trends in drying technologies of industrial interest. In general, the trends in drying technologies will continue to be in the direction of: higher energy efficience; enhanced drying rate; better control for enhanced quality and optimal capacity; improved product quality; reduced environmental emissions; safer operation by elimination of fire and explosion hazards; flexible systems which can be used for drying of several different products at varying production rates; multi-processing capabilities (e.g. combine drying with chemical reactions, agglomeration, cooling or heating, coating etc. in one unit); development of designer dryers to impact special physical characteristics to products development of dryers employing multiple heat sources which can be tailored to meet requirement of specific products and development of drying which avoid unnecessary product handling by combining operation.

    Summary: The membrane market has been growing at an annual rate of 12% over the last ten years, which is three times greater than the growth of the market for classical filter equipment forsolid-liquid separation. The USA account for 55% of the total module and membrane production, Europe accounts for only 20%, and Japan for about 22%. In 1988 a total of 70 to 80% of the biotechnology costs in the USA were accounted for by separation techniques. In 1987 a total of 31% of the separation processes carried out were accounted for by centrifugal techiques, which are expected to fall to only 15% by 1997. The proportion of evaporation techniques is also expected to fall, while the proportion of membrane separation techniques is expected to grow to over 35%, with processes using affinity membranes covering as much as 8% by 1997. Medical technology and potable and waste waters account for one third of the application of membrane techniques. These are followed by the food and beverages field. A change in this order is expected to take place by 1995 as follows: the food and beverage industry will come first ,followed by potable and waste waters, medical technology and biotechnology.

    Summary: Three high performance size exclusion chromatography columns placed in series were calibrated in terms of radii of gyration(Rg) and hydrodynamic volume (intrinsic viscosity - IV x molecular weight -M) with a series of pullulan and dextran standards ranging in M from 853,000 to 10,000. Online detectionw as by differential refractive index (DRI) and viscometry (DP).Two forms of universal calibration were employed to obtain Rg, IV and M for pectin, a class of complex plant cell-wall polysaccharides. For pectins extracted from a large number of sources, a Mark-Houwink plot (log IV vs. log M) gave a correlation coefficient of 0.2; whereas, a plot of log (IV) against log Rg gave a correlation coefficient of 0.9. These results in addition to those from the analyses of several pectins from peach fruit indicated that pectins were aggregated and highly assimetric in shape. The scaling law exponents for pectins were affected by both shape and state of aggregation, rather than shape alone.

    Summary: Radius of gyration (size), intrinsic viscosity, molecular weight,percentage of galacturonate and percentage of neutral sugars were measured for chelate-soluble (CSP) and alkaline-soluble (ASP)pectins extracted from the cell walls of melting flesh (MF) and nonmelting flesh (NMF) peach ŠPrunus persica (L.) BatschĆ. Weight percentage of cell walls, pectin content and firmness were measured also. Peaches were extracted at 20,21 and 22 weeks after flowering (WAF) and after various lenghts of shelf storage at 25 C for the peaches picked at 21 WAF. Weight percentage of cell wall sand firmness decreased markedly between the 21st and 22nd WAF;and between the 3rd and 6th day of storage for MF peaches as compared to NMF peaches. During these same periods, there were marked drops in the pectin content and the uronide content for MF as compared to NMF peache. Size and intrinsic viscosity dropped markedly for CSP of MF peaches in comparison with NMF peaches these same periods, whereas the molecular weight of CSP and ASP increased in MF peaches over that measured for NMF peaches. These results suggested that alpha-D-galacturonase (E.C.3.2.1.15) was involved in softening only in the latter stages of ripening MF peaches. Further, cell wall polymers containing long thin pectin aggregates were destroyed, whereas cell walls polymers containing short thick pectin aggregates remained.

    Summary: Effect of different membrane and operating conditions on color, volatiles, sugars and acids was investigated during the concentration of black-currant juice by hyperfiltration. The two types of membrane affected pigment retention differently. During the concentration, the proportion of free anthocyanines increased, while the proportion of condensed pigments remained constant. Volatiles retention depended to a considerable extenton the process parameters, the membrane type used, the degree of concentration, and the operating temperature. In contrast to the retention of the volatiles, the retention of sugars and total acids was almost completely independent of the operating conditions. The retention of sugars was very good with both types of membrane.

    Summary: High performance size exclusion chromatography revealed that alkaline-extracted peach fruit pectin dissolved in 0.05M NaNO3 comprised a hierarchy of at least four aggregated, macromolecular-size species. Each of the three largest species was found to be comparable in length to the three smallest subunits of an interconnecting gel network visualised by transmission electron microscopy of pectin, rapidly dried from solution. The interconnecting subunits of the gel network were rods of segmented rods and the integrated network formed a circular gel about 1um in diameter. Shadowed samples prepared from 5 and 50 mM NaCl or aqueous glycerol solutions produced images of partially dissociated subunits.

    Summary: A complete understanding of the effect of dissolved pectins on the quality of fruit juices has been limited by inability to fully characterize pectins in solution. Recently a method was developed that uses high perfomance size exclusion chromatography(HPSEC) with concentration and viscosity detection to obtain the radius of gyration, (Rg), the intrinsic viscosity, and the molecular weight (MW) of pectin. Ultrafiltration (UF) of pectin was investigated in order to determine conditions under which pectin could be either concentrated or fractionated. Removal of small MW material by UF has the potential of increasing both the weight average MW and the viscosity of material in the retentate. UF offers industry a method for purifying pectin and for controlling critical functional properties of pectin, such a sviscosity and ability to gel. Commercial citrus pectin and lime pectin were treated by plate module ultrafiltration (PMF) (1). Commercial citrus and apple pectins were treated by hollow fiber ultrafiltration (HFF) (2). The pectin in the retentates was subjected to HPSEC and the chromatograms were analyzed in terms of narrow Rg MW distribution components to determine changes in Rg, MW and viscosity (3-5)

    Summary: The paper deals with an alternative procedure for reducing the amount of the heavy metals in wine. The procedure is based on the complex-binding properties of popcorn-polymeres based on 1-vinylpyrrolidone. The active group in this compound is the imydasole ring. The mechanism of activity is based not on the ion-exchanger mechanism but in the donor-acceptor bond between the heterocycic ring with nytrogen and the heavy metal catione.The action of various popcorn-polymeres with a growing share of imydasole was investigated. The results show that the new popcorn-polymere preparation is fully acceptable as an alternative to blue fining. It is highly selective and effective and at the same time avoids the problem of cyanide both in application and waste disposal.

    Summary: Complex polysaccharides isolated from plants and microorganisms have a growing application in the food industry, where they are used as additives to improve the functional properties of foodstuffs. Research was carried out with solutions of apple, tragacanth, carob flour, gum arabic and Na-alginate pectins. The methods used were high performance size exclusion chromatography and viscosity measurements. The results show that this techniqueis highly suitable for determining even small changes of the characteristics of hydrocolloids under the influence of temperature, microwave energy, enzymes, chemical agents or the aging of the substrate.

    Summary: Cross-flow filtration is a well-known separation process in food and beverage technology. This process has been of interest for industry for the last 30 years. One of the cross-flow techniques is ultrafiltration. This is a membrane process which is being increasingly used not only in the processing of diary products, but also in the various stages of fruit juice and wine technology as a substitute for the conventional filtration/clarification procedure. Due to the rapid development of membranes(with regard to the kind of material and structure), such a clarification process does not cause any change in the colour and bouquet of wines. The objective of this investigation was to study the comparative advantages(as regards wine quality) of various procedures of cross-flow filtration compared to the classical (dead end) filtration. Furthermore, the importance of removing the concentrate by the batch, semi-batch and continuous ultrafiltration procedures for the capacity of filtration was investigated.

    Summary: Reverse osmosis is a process where water is removed from a solution combining dissolved matter to be concentrated. Over the past few years this process has found an increasing applicationin fruit juice and concentrate technology as an alternative to traditional processes as concentration by evaporation, especially when some disadvantages of traditional processes have to be avoided (in this case influence of temperature). The objective of this research was to investigate the behaviour,i.e. the passage into the permeate of various metals and non-metals and the retention of volatiles during quince juice concentration by reverse osmosis in a DDS LAB 20-module UF-RO system using two membrane types at two operating temperatures and an operating pressure of 50(60) bar. The increase in the permeability of the selected membranes for the elements investigated was not the same for the total soluble dry solids, but varied depending on the nature of the elements. Generally, the increase in the permeability of the membranes for the elements investigated was an inverse function of their atomic mass, which was to be expected. Although the fraction in the permeate was not great in absolute values, it increased as the degree of concentration of the juice increased , but not to the same extent as was the case within the total soluble dry solids. The temperature and the degree of concentration influenced the permeability of the membrane for the soluble total solids and for metals and non-metals. The passage of these substances from the juice into the permeate increased with increasing temperature and degree of concentration.

    Summary: The properties of fruit juices are determined to a great extentby the composition and mutual interrelationship of non-volatileorganic acids. This research involved developing a method thatwould make possible the simoultaneous determination of the majornon-volatile organic acids in fruit juices. The investigationswere carried out on concentrated lemon, orange, pineapple, plumand sour cherry juices. Measurments were made using gaschromatography. The results show that the method suggested can beused very successfully to determine the non-volatile organicacids in fruit juices. Due to its simplicity, it could bedeveloped further and proposed as the standard technique fordetermining one of the quality parameters of non alcoholicbeverages.

    Summary: Wine contains valuable mineral substances and trace elements in avery favourable form. However, large concentrations of someelements in wine,particularly iron and copper,may effect thehealth of consumers,as well as having a negative effect on thetechnological process of wine making. In thisresearch,investigations were carried out with a new syntheticsubstance,polyvinilimidazol (PVI),which has the ability toselectively remove particular metals. The results show that PVIhas higly effective in removing copper and iron, but was not soeffective in removing zinc and manganese. The results indicatethat PVI can be used successfully as a substitute for potassiumhexacyanoferrate(II) for wine clarification.

    Summary: Research was carried out on the influence of various methods ofcarrying out the filtration process on the filtration capacityand the quality of white wine. These methods included batch,semi-batch and continous filtration, as well as clasicallfiltration. A high quality white wine was used on a commercialscale. Better colloid separation from wine was achieved usingultrafiltration compared to clasicall filtration. The greatestfiltration capacity was achieved by the batch method, followed bythe semi-batch and continuous methods.

    Summary: The goal of this research was to find a simple method for the production of wines enriched with procyanidins. Experiments were carried on the red grape cultivar Vranac in the years 1990,1991,1992. The wines were produced from crushed grapes by the process of: T.F.-traditional vinification (the pomace contact was five days long) and M.F.-modified vinification (includes a maceration with a greater share of solid phase). Low molecular flavans were determined by high pressure liquid chromatography (HPLC) on reverse phase using gradient elution. Previous Fractionation of acidic and neutral phenolic compounds on Sep pak C18 cartridges was carried out. The results obtained showed differences in the amounts of (+)-catehin, (-)-epicatehin and procyanidin dimers B1, B2, B3 and B4 in the wines produced by traditional and modified vinification. The positive effect of an extended period of maceration was also noticed. The process of modified vinification is very simple and according to the results obtained, makes possible the production ofwines which can be considered physiologically, from grape moderately rich with procyadins.

    Summary: The aim of the research was to investigate the influence ofvarious methods of carrying out the filtration process on thecapacity and yield of white wine. The methods which were used inthe research were the batch, semibatch and continuousultyrafiltration methods, as well as the classical filtrationmethod. The research was carried out on Laški Rieslig 89, a fine whitewine of controlled origin, on commercial scale. Theultrafiltration process was carried out on a DDS pilot modulewith built-in fluorpolymer membranes known as FS 40 PP with apoor diameter of 100.000 Daltons. The classical filtration process was carried out on a verticalplate filter. The results of the research indicate that the batch, semibatchand continuous ultrafiltration methods may be used successfullyto clarify white wines, both with regard to the efficiency of thepilot equipment used and with regard to the sensory properties ofthe wine.
