Summary: This work is directed to recording and standardisation of
work incatering industry in aim of rationalisation and profit incrementin
hotel companies. Applicational researches of material,eguipment and work in
catering and tourism were conducted inPoreč during the summer season 1990.
The research covers : 1. aim and task of research, 2. methodsapplied, 3.
research sample, 4. measurement i. e.standardisationof work conducted in
four tracts : reception,accomodation, food preparation and servig. The are
also presentedmanagement elements in catering company from the aspects
ofmarketing, work organization and rationalisation.

Summary: This work has been on the initiative of tourism companies
for newapproach in planing of regional development, on the bases oncomplete
and coordineted building-site preparation.
Practical experiences proved that building-site preparationmethods are
powerful tool in solving problems of common interest.This is particulary
expressed in tourist regions, wheredifferent people from different places
intensivelymeet.Therefore, tourist companies have established
expertservices for solving problems in building-site preparation,
whichachieved positive and negative effects.
