Summary: The proposed research project involves an examination of relevant indicators of safety, market quality and acceptability of meat,and the optimization of meat control system in meat production, processing and distribution for the domestic and foreign markets. In all this, Good Manufacturing Practice (GMP), modern market definition of quality (SQA) and a proper assessment of critical points in meat production and distribution - all in line with the EC's guidelines (the HACCP concept) - have a special place. Project involves an examination of beef, pork and poultry meat and meat products quality with regards of Europeans standards. The microbiological indicators of products quality is investigated including the microbiological celareness of producting areas. There is a significance of animal nutrition and good veterinary practice on the products quality and hygiene saffety of animal products with special regards of bio-rezidua (QCA).

Research goals: Consumer protection and market protection in general thus involve controlling and preventing different types of contamination. They also assume an efficient organization of the control and inspection services. The role that food product control plays in the context of limiting and eliminating environmental pollution is particularly important in this. As to food quality control, deregulation is the dominant practice in other countries. It strives to strike an optimal balance between meat industry, inspection services and main trends in product quality assessment methods. Only the principles of GMP harmonization, market definition of quality according to SQA concept and the selection of an optimal method for quality assessment enable a prosperous meat production and consumption. These two must be based on risk assessment and control of critical points in the production (HACCP concept). A resonable solution would require having a uniform regulation of quality assessment and introducing it into meat production and processing. It could thus fulfill the condition of a guaranteed manufacturer's specification and product labelling becoming factors in the development of industry and market stability. The proposed study aims of exploring any factor relevant to an appropriate integration of internal quality control and inspection services based on a possible deregulation of all market factors in meat production and distribution derive from this. Other study aims include an effective and continius sophistication of direct and laboratory control in the monitoring systems and the world's standard doctrine of veterinarian-sanitarian control. The study should thus define indicators for the prospects of food safety and food quality, and of a more efficient meat production control in the world trend of the "Healthy Animals, Safe Food, Helthier Man" program.
